We store the oil in underground deposits which are named "cups". In the past they were made of ceramics, but now are made of stainless steel, a better option to prevent fermentation. Once a week we move the oil to stainless deposits in a ware house where the temperature is always the same and the sun light can not come through.
The deposits are conical in order to take out all the dampness and organic particles that come down with time.
Another task it is to move the oil from one deposit to another to keep them clean and in perfect condition.
