Les Costes estate went through the same situation as described previously.
In our family we have decided to start using irrigating support in part of the estate, as the extreme rain shortage affects the oil quality in a negative way. Fruit doesn't develope normally, producing olives with big pits in comparison with the pulp part. The oil obtained has a strong woody taste, and it's also less fruity because of the excessive ripe of the olive. We want to clarify that the olive production per tree has not been increased. In Les Costes estate it will always be quality over quantity, and the irrigating suport implementation, which could seem as a way of increasing production, has been chosen to keep the quality standards.
The oil filtering process has been slightly modified. Looking back to the Les Costes beginnings, it has been done through natural decantation (weights difference). |
